Method

Preparing the Bavarois

    Bloom the Gelatin

    Soak the gelatin sheets in cold water for about 5 minutes until softened. Remove and squeeze out excess water.

    Combine Matcha and Sugar

    In a saucepan, combine milk, granulated sugar, and matcha powder. Heat gently until the sugar dissolves and the mixture is warm (do not boil).

    Add Gelatin

    Remove the saucepan from heat and add the bloomed gelatin, stirring until fully dissolved.

    Whip Cream

    In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the matcha mixture.

    Set the Bavarois

    Pour the mixture into molds and refrigerate for at least 4 hours or until set.

Making the Green Apple Purée

    Cook Apples

    In a saucepan, combine chopped green apples, lemon juice, and sugar. Cook over medium heat until the apples are soft, about 10 minutes.

    Blend the Purée

    Allow the mixture to cool slightly, then blend until smooth. Strain if desired for a silky texture.

Assembly and Serving

    Plate the Bavarois

    Unmold the Bavarois onto serving plates.

    Add Apple Purée

    Spoon the green apple purée around the Bavarois.

  3. 10

    Garnish

    Dust with matcha powder and add a slice of green apple for garnish before serving.
