Method
Prepare Sushi Rice

Cook the Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions.

Season the Rice
In a small saucepan, combine rice vinegar, sugar, and salt. Heat until sugar dissolves. Once the rice is cooked, mix it with the vinegar mixture and let it cool.
Prepare Aburi Oshi

Layer the Ingredients
In a sushi mold, layer the sushi rice, followed by a layer of sliced salmon, then more rice. Press down firmly.

Torch the Top
Using a kitchen torch, gently sear the top layer of salmon until slightly charred.

Slice and Serve
Remove from the mold, slice into pieces, and serve with soy sauce and wasabi.
Prepare Rolls

Roll the Sushi
On a bamboo mat, place a nori sheet and spread an even layer of sushi rice over it. Add avocado, cucumber, and cream cheese in the center.

Roll and Slice
Roll the sushi tightly using the mat. Slice into bite-sized pieces and drizzle with spicy mayo before serving.
Prepare Nigiri

Form the Nigiri
Wet your hands and take a small amount of sushi rice, forming an oval shape. Place a piece of shrimp on top.

Garnish and Serve
Top with a small amount of wasabi and serve with pickled ginger.
