Preparation of Rice

    Cook the Rice

    Rinse 2 cups of rice under cold water until the water runs clear. Add the rice to a rice cooker with the appropriate amount of water (usually 1:1.5 rice to water ratio). Cook according to the rice cooker's instructions.

Preparing the Sauce

    Make the Unagi Sauce

    In a small saucepan, combine 4 tablespoons of soy sauce, 2 tablespoons of mirin, 2 tablespoons of sake, and 1 tablespoon of sugar. Heat over medium heat until the sugar dissolves and the sauce slightly thickens, about 5 minutes. Set aside.

Grilling the Eel

    Grill the Eel

    If using pre-cooked unagi, simply heat it on a grill or a skillet until warmed through, about 5-7 minutes. If grilling from raw, grill over medium heat for about 10 minutes on each side, brushing with the prepared sauce during the last few minutes.

Assembling the Dish

    Assemble Unagi Don

    Place a generous serving of steamed rice in a bowl. Slice the grilled eel into bite-sized pieces and place it over the rice. Drizzle the remaining sauce over the eel.

    Garnish

    Sprinkle 1 tablespoon of sesame seeds and 2 tablespoons of chopped green onions over the top for garnish.
