Method

BBQ White Tuna Preparation

    Marinate the Tuna

    In a bowl, mix the BBQ sauce, olive oil, salt, and pepper. Add the white tuna and let it marinate for 15 minutes.

    Grill the Tuna

    Preheat the grill to medium-high heat. Grill the marinated tuna for about 3-4 minutes per side until cooked through and slightly charred.

    Slice the Tuna

    Remove the tuna from the grill and let it rest for a couple of minutes. Slice it into 1-inch thick pieces.

Spicy Tuna Roll Preparation

    Prepare the Sushi Rice

    Cook the sushi rice according to package directions. Once cooked, let it cool to room temperature.

    Make the Spicy Tuna Mix

    Mix the spicy tuna mix with a little bit of mayonnaise and sriracha to taste, if desired.

    Assemble the Roll

    On a bamboo sushi mat, place a sheet of nori. Spread about 1/4 of the sushi rice evenly over the nori. Add a line of spicy tuna mix, sliced cucumber, and avocado. Roll tightly and slice into 6-8 pieces.

    Sprinkle with Sesame Seeds

    Sprinkle sesame seeds on the outside of the roll for added flavor.

Midtown Roll Preparation

    Prepare the Sushi Rice

    Cook the sushi rice according to package directions. Allow it to cool to room temperature.

    Assemble the Midtown Roll

    On a bamboo sushi mat, place a sheet of nori. Spread about 1/4 of the sushi rice over the nori. Add shrimp tempura, a thin layer of cream cheese, and drizzle with spicy mayo. Roll tightly and slice into bite-sized pieces.

    Garnish

    Sprinkle chopped chives on top of the Midtown rolls for garnish.
