Midtown Roll
Method
Prepare Sushi Rice
- 1
Rinse the Rice
Place the sushi rice in a fine-mesh strainer and rinse it under cold water until the water runs clear. This step removes excess starch.
- 2
Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium heat, then cover and reduce to low heat. Cook for 18-20 minutes, or until water is absorbed.
- 3
Season the Rice
In a small bowl, combine rice vinegar, sugar, and salt. Heat in a microwave for 20 seconds until sugar dissolves. Once rice is cooked, transfer to a large bowl and mix in the vinegar mixture. Let it cool.

Prepare the Rolling Station
Place a bamboo sushi mat on a clean surface and cover it with plastic wrap. Keep a small bowl of water nearby to wet your hands.
- 5
Assemble the Ingredients
Lay a nori sheet shiny side down on the bamboo mat. Wet your fingers and grab a handful of sushi rice, spreading it evenly over the nori, leaving a small border at the top.
- 6
Add Fillings
Place shrimp, avocado, and cucumber in the center of the rice. Drizzle spicy mayonnaise over the top.
- 7
Roll the Sushi
Using the mat, carefully roll the sushi away from you, pressing gently to make a tight roll. Seal the edge with a bit of water.
- 8
Slice and Serve
Use a sharp knife to slice the roll into bite-sized pieces. Drizzle eel sauce and sprinkle sesame seeds on top before serving.
