Noodles and Tofu

Method

Prepare the Tofu

Press the Tofu

Wrap the firm tofu in paper towels and place a heavy object on top to press out excess moisture for about 15 minutes.

Cube the Tofu

Once pressed, cut the tofu into small cubes.

Cook the Udon Noodles

Boil Water

Bring a pot of water to a boil over high heat.

Cook the Noodles

Add the udon noodles to the boiling water and cook according to package instructions, usually around 8-10 minutes. Drain and set aside.

Make the Broth

Combine Ingredients

In a large pot, combine the vegetable broth, soy sauce, sesame oil, minced garlic, and grated ginger.

Heat the Broth

Bring the mixture to a simmer over medium heat, stirring occasionally.

Season the Broth

Add salt and black pepper to taste and let it simmer for an additional 5 minutes.

Assemble the Dish

Combine Noodles and Tofu

Add the cooked udon noodles and cubed tofu to the broth, stirring gently to combine.

Serve Hot

Ladle the udon and tofu into bowls, and top with sliced green onions, nori strips, and sesame seeds.
