Prepare the Ingredients
Slice the chicken breast into thin strips. Cut the fishcake into thin rounds. Chop the green onions into small pieces, and slice the carrot into thin julienne strips. Rinse the spinach and set aside.

Cook the Udon Noodles
In another pot, bring water to a boil. Add the udon noodles and cook according to package instructions, usually about 8-10 minutes. Once cooked, drain and rinse under cold water to stop the cooking process.

Cook the Chicken and Vegetables
In the pot with the dashi broth, add the sliced chicken breast and let it cook for about 5 minutes until cooked through. Then add the julienned carrot and cook for another 3 minutes. Finally, add the spinach and fishcake, cooking for an additional 2 minutes until the spinach is wilted.

Combine and Serve
Divide the cooked udon noodles into serving bowls. Ladle the dashi broth with chicken, fishcake, and vegetables over the noodles. Garnish with chopped green onions and serve hot.
