Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine mesh strainer and rinse under cold running water until the water runs clear, about 3-5 minutes. This removes excess starch and helps the rice to be less sticky.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and water is absorbed.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove from heat and let it sit covered for 10 minutes. Then transfer the rice to a large bowl and gently fold in the vinegar mixture while fanning the rice to cool it down.

Prepare Salmon

    Slice the Salmon

    Using a sharp knife, slice the fresh salmon fillet against the grain into thin, bite-sized pieces. Aim for slices that are about 1/4 inch thick.

    Assemble the Sake Don

    In a serving bowl, place a generous amount of the seasoned sushi rice at the bottom. Arrange the sliced salmon on top of the rice. Serve with soy sauce, wasabi, and pickled ginger on the side.
