    Prepare the Ingredients

    Dice the beef into bite-sized cubes. Peel and chop the potatoes and carrots into similar-sized pieces. Chop the onion finely, and mince the garlic and ginger.

    Sear the Beef

    In a large pot, heat the vegetable oil over medium-high heat. Add the beef cubes and sear until browned on all sides. Remove the beef from the pot and set aside.

    Cook the Aromatics

    In the same pot, add the chopped onion. Sauté until it becomes translucent, about 5 minutes. Add the minced garlic and ginger, and cook for another minute until fragrant.

    Add Vegetables and Spices

    Add the diced potatoes and carrots to the pot. Sprinkle in the curry powder and stir well to coat the vegetables with the spices.

    Combine Ingredients

    Return the seared beef to the pot. Pour in the beef broth and coconut milk. Stir to combine all the ingredients.

    Simmer the Curry

    Bring the mixture to a gentle boil. Reduce the heat to low, cover the pot, and let it simmer for about 1.5 hours, or until the beef is tender. Stir occasionally and check for seasoning.

    Towards the end of cooking, add salt and black pepper to taste. Adjust seasoning as needed.
