Flautas Preparation

Prepare the filling
In a mixing bowl, combine the shredded chicken, salt, and half of the shredded cheese. Mix well and set aside.

Assemble the flautas
Heat the corn tortillas in a skillet for about 30 seconds on each side until pliable. Take one tortilla and place about 2 tablespoons of the chicken mixture at one end. Roll the tortilla tightly and secure it with a toothpick if necessary. Repeat with remaining tortillas.

Fry the flautas
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the rolled tortillas in batches, frying until golden brown and crispy, about 3-4 minutes on each side. Remove and drain on paper towels.

Serve
Serve the flautas hot, topped with the remaining shredded cheese, sour cream, guacamole, and salsa.
