Preparation of Shrimp

    In a large bowl, combine the buttermilk, eggs, Cajun seasoning, salt, and black pepper. Whisk until smooth. Add the shrimp and coat well. Let it marinate for at least 30 minutes in the refrigerator.

    In a separate shallow dish, combine cornmeal and flour. Mix well to distribute evenly.

Frying the Shrimp

    Heat the Oil

    In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Bread the Shrimp

    Remove the shrimp from the marinade, allowing any excess liquid to drip off. Dredge each shrimp in the cornmeal-flour mixture, ensuring they are fully coated.

    Carefully place the breaded shrimp in the hot oil, frying in batches if necessary to avoid overcrowding. Fry for 3-4 minutes or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.

Assembling the Po Boy

    Slice the French bread loaves lengthwise, leaving one side intact to create a hinge.

    Spread a generous amount of remoulade sauce on both sides of the bread. Layer the fried shrimp, followed by shredded lettuce, tomato slices, and pickles.
