Shrimp Preparation

Prepare the Shrimp
In a mixing bowl, combine the flour, cornmeal, salt, black pepper, and cayenne pepper. In another bowl, whisk together the eggs and milk.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Carefully add the coated shrimp to the hot oil in batches. Fry for 2-3 minutes or until golden brown and cooked through. Remove and drain on paper towels.
Assembling the Po' Boy

Toast the Bread
Cut the French bread rolls in half and lightly toast them in the oven or on a grill until golden.

Layer the Ingredients
On the bottom half of each toasted roll, layer shredded lettuce, tomato slices, fried shrimp, cole slaw, and a generous drizzle of remoulade sauce.

Close and Serve
Top with the other half of the bread, slice in half if desired, and serve immediately with extra remoulade on the side.
