Oyster Preparation

    Clean and Shuck Oysters

    Carefully clean the fresh oysters under cold running water. Using an oyster knife, shuck the oysters and place them in a bowl. Discard the top shell.

    Prepare Breading Station

    Set up a breading station by placing all-purpose flour in one bowl, a mixture of eggs and milk in another bowl, and cornmeal mixed with salt and pepper in a third bowl.

    Bread the Oysters

    Dip each shucked oyster first into the flour, then into the egg mixture, and finally into the cornmeal mixture, ensuring they are evenly coated.

Frying Oysters

    Heat Oil

    In a large skillet or deep fryer, heat the oil over medium-high heat until it reaches about 350°F (175°C).

    Fry Oysters

    Carefully add the breaded oysters to the hot oil in batches, ensuring not to overcrowd the pan. Fry for 2-3 minutes or until golden brown.

    Drain Oysters

    Using a slotted spoon, remove the fried oysters and place them on a plate lined with paper towels to drain excess oil.

Remoulade Preparation

    Mix Ingredients

    In a bowl, combine mayonnaise, Dijon mustard, chopped capers, chopped parsley, lemon juice, and hot sauce. Mix well until smooth.

    Chill Sauce

    Cover the remoulade sauce and refrigerate for at least 30 minutes before serving for the best flavor.
