Fish Preparation

    Prepare the batter

    In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold beer until the batter is smooth and free of lumps.

    Heat the oil

    In a deep fryer or large pot, heat 4 cups of vegetable oil to 350°F (175°C).

    Batter the fish

    Dip each cod fillet into the batter, ensuring it is completely coated.

    Fry the fish

    Carefully place the battered cod fillets in the hot oil, cooking for about 4-5 minutes on each side or until golden brown. Remove and drain on paper towels.

    Prepare the potatoes

    Peel and cut the russet potatoes into thick strips to resemble fries.

    Soak the fries

    Soak the cut potatoes in water for at least 30 minutes to remove excess starch.

    Heat the oil

    In a separate deep fryer or large pot, heat an additional 4 cups of vegetable oil to 350°F (175°C).

    Fry the fries

    Drain the potatoes and pat them dry. Fry the potatoes in batches for about 5-7 minutes until they are golden and crispy. Season with salt to taste.

Tartar Sauce Preparation

    Mix the sauce

    In a small bowl, combine mayonnaise, finely chopped pickles, lemon juice, and finely chopped capers. Mix well and season with salt to taste.
