Crust Preparation

    Prepare the crust

    Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs and sugar. Stir in the melted butter until the mixture is well combined and resembles wet sand.

    Form the crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 8-10 minutes until lightly golden. Remove from the oven and let cool.

Cheesecake Filling Preparation

    Mix the filling ingredients

    In a large mixing bowl, beat the softened cream cheese with a hand mixer on medium speed until smooth and creamy. Gradually add in the sugar, sour cream, and vanilla extract, mixing until well combined.

    Add the eggs

    Add the eggs one at a time, mixing on low speed until just combined after each addition. Do not overmix.

    Pour filling into crust

    Pour the cheesecake filling over the cooled crust in the springform pan. Spread it evenly with a spatula.

    Bake the cheesecake

    Bake in the preheated oven at 325°F (160°C) for 50-60 minutes, or until the edges are set but the center still has a slight jiggle. Turn off the oven and let the cheesecake sit in the oven with the door ajar for 1 hour.

    Chill the cheesecake

    Remove from the oven and let cool to room temperature. Once cool, cover and refrigerate for at least 4 hours or overnight.

Strawberry Sauce Preparation

    Make the strawberry sauce

    In a saucepan over medium heat, combine the sliced strawberries, sugar, and lemon juice. Cook, stirring occasionally, until the strawberries are soft and the mixture begins to thicken, about 10 minutes.

    Cool the sauce

    Remove from heat and let the sauce cool to room temperature. You can blend it for a smoother consistency if desired.

Serving

    Serve the cheesecake

    Remove the cheesecake from the springform pan. Slice and serve each piece with a drizzle of strawberry sauce on top.
