Prepare the Brussels Sprouts
Preheat your oven to 200°C (400°F). Trim the ends of the Brussels sprouts and remove any yellow leaves. Cut them in half lengthwise.

Season and Toss
In a large bowl, combine the halved Brussels sprouts with olive oil, salt, and black pepper. Toss well to ensure even coating.

Roast the Brussels Sprouts
Spread the Brussels sprouts on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, until they are golden and crispy, stirring halfway through.

Make the Ginger Vinaigrette
In a small bowl, whisk together the minced ginger, honey, and rice vinegar until combined. Adjust seasoning with salt if necessary.

Once the Brussels sprouts are roasted, transfer them to a serving bowl and drizzle with the ginger vinaigrette. Toss gently to coat and serve immediately.
