Prepare the Brussel Sprouts
Preheat your oven to 400°F (200°C). Trim the ends of the Brussel sprouts and remove any yellow or damaged leaves. Cut them in half lengthwise.

Season and Roast
In a large bowl, combine the halved Brussel sprouts with olive oil, salt, black pepper, grated ginger, and honey. Toss until they are evenly coated. Spread them out on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until they are golden brown and tender, stirring halfway through.

Make the Ginger Vinaigrette
In a small bowl, whisk together the apple cider vinegar, remaining honey, and a pinch of salt. Adjust seasoning if needed.

Combine and Serve
Once the Brussel sprouts are roasted, transfer them to a serving bowl and drizzle with the ginger vinaigrette. Toss to combine and serve warm.

Wash the apples thoroughly. Using a mandoline or a sharp knife, shave or thinly slice the apples into thin rounds or matchsticks.

Let the apples sit for a few minutes to absorb the flavors, then serve alongside the roasted Brussel sprouts.
