Preheat the Oven
Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, 0.5 teaspoon of baking soda, and 0.5 teaspoon of salt. Whisk together until well mixed.

Cut in the Butter
Add 0.5 cups of cold unsalted butter to the dry ingredients and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

Add Buttermilk
Pour in 0.75 cups of buttermilk and 3 tablespoons of milk into the dry mixture. Stir gently until just combined, being careful not to overmix.

Shape the Biscuits
Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch thick rectangle. Use a biscuit cutter to cut out biscuits.

Bake the Biscuits
Place the biscuits on a baking sheet and bake in the preheated oven for 12-15 minutes, or until golden brown.
Sausage Gravy

Cook the Sausage
In a large skillet over medium heat, add 1 pound of ground sausage. Cook until browned and crumbled, about 5-7 minutes.

Make the Roux
Sprinkle 0.25 cups of all-purpose flour over the cooked sausage and stir to combine. Cook for an additional 2 minutes to eliminate the raw flour taste.

Add Milk and Spices
Slowly pour in 2 cups of milk while continuously stirring to avoid lumps. Add 1 teaspoon of black pepper, 0.5 teaspoon of salt, and 0.25 teaspoon of red pepper flakes. Stir until the gravy thickens, about 5-10 minutes.

Serve
Once the gravy is thickened, serve it immediately over the freshly baked biscuits.
