Prepare the Potatoes
Wash and peel the Russet potatoes, then cut them into thin strips to create fries.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Dry the Fries
Drain the fries and pat them dry with paper towels to remove moisture.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the fries to the hot oil in batches and fry until golden brown and crispy, about 5-7 minutes.

Drain and Season
Remove the fries from the oil and drain on paper towels. Sprinkle with salt to taste.

Add Truffle Oil
Drizzle the hot fries with truffle oil. Toss gently to coat.

Serve immediately while hot, optionally garnished with grated Parmesan cheese and fresh herbs.
