    Prepare the Pork

    Rub the pork shoulder with salt, black pepper, garlic powder, and onion powder. Let it sit for at least 30 minutes at room temperature.

    Smoke the Pork

    Preheat your smoker to 225°F (107°C). Place the pork shoulder in the smoker and smoke for about 6-8 hours, or until the internal temperature reaches 195°F (90°C).

    Pull the Pork

    Once the pork is done, remove it from the smoker and let it rest for 30 minutes. Then, shred the meat using two forks.

    Prepare the Coleslaw

    In a large bowl, mix the coleslaw mix with coleslaw dressing until combined. Set aside.

    Assemble the Sandwiches

    Slice the ciabatta rolls in half. Layer pulled pork on the bottom half, top with gouda cheese, pickles, and fried onions. Drizzle with BBQ sauce, then place the top half of the roll on.
