Prepare the Pork
In a slow cooker, combine pork shoulder, chopped onion, minced garlic, cumin, oregano, salt, and black pepper. Cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it with two forks. Mix in lime juice for added flavor.

Assemble the Nachos
On a large baking sheet, spread tortilla chips evenly. Top with shredded pork, white cheddar cheese, and queso fresco.

Preheat the oven to 400°F (200°C). Bake the nachos for about 10 minutes or until the cheese is melted and bubbly.
