Prepare the Pork Carnitas
In a slow cooker, combine the pork shoulder, salt, pepper, cumin, garlic powder, onion powder, and olive oil. Cook on low for 8 hours or until the pork is tender and can be shredded easily.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it with two forks. Return the shredded pork to the slow cooker and stir in a bit of the cooking liquid to keep it moist.

Warm the Tortillas
In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until they are pliable.

Assemble the Tacos
To assemble, place a generous amount of the pork carnitas on each tortilla. Top with diced tomatoes, sliced jalapeños, avocado salsa, and crumbled queso fresco.
