    Prepare the Potatoes

    Peel the russet potatoes and grate them using a box grater or food processor. Rinse the grated potatoes in cold water to remove excess starch, then drain and pat dry with a clean kitchen towel.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

    Cook the Hashbrowns

    Spread the grated potatoes evenly in the skillet. If using onion, sprinkle it over the top. Season with salt and pepper. Press down with a spatula to compact them. Cook for about 5-7 minutes until the bottom is golden brown.

    Flip and Crisp

    Carefully flip the hashbrowns using a large plate. Cook the other side for another 5-7 minutes until crispy and golden brown.

    Serve

    Once both sides are cooked, remove the hashbrowns from the skillet and drain on paper towels. Serve hot.
