    Prepare the Chorizo-Beef Mix

    In a bowl, combine the chorizo sausage and ground beef. Season with salt and black pepper. Mix until well combined and form into two burger patties.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels.

    Cook the Burger Patties

    In the same skillet with some of the bacon grease, cook the burger patties for about 4-5 minutes on each side or until cooked to your desired doneness. In the last minute of cooking, place a slice of Muenster cheese on each patty to melt.

    Fry the Eggs

    In a separate pan, fry the eggs sunny-side up or to your preference.

    Make the Avocado Smash

    In a bowl, mash the avocado with lime juice and season with salt.

    Prepare the Calabrian Aioli

    In a small bowl, mix the mayonnaise with Calabrian chili paste until well combined.

    Cook the Tater Tots

    Prepare the frozen tater tots according to package instructions until crispy.

    Assemble the Burger

    On each burger bun, spread a layer of Calabrian aioli, add the chorizo-beef patty with melted cheese, top with crispy bacon, a fried egg, and a generous dollop of avocado smash. Close the bun and serve with a side of tater tots.
