Sponge Cake

    Prepare the cake batter

    Preheat your oven to 350°F (175°C). In a mixing bowl, whisk together the eggs and granulated sugar until the mixture is pale and fluffy. Add the vanilla extract and mix well.

    Combine dry ingredients

    In a separate bowl, sift together the all-purpose flour, baking powder, and salt. Gradually fold the dry ingredients into the egg mixture until just combined.

    Bake the cake

    Grease an 8-inch round cake pan with unsalted butter. Pour the batter into the prepared pan and smooth the top. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

    Cool the cake

    Once baked, remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

Brûléed Citrus

    Prepare the citrus

    Slice the blood oranges in half and remove any seeds. Place the cut side up on a baking sheet.

    Brûlée the citrus

    Sprinkle granulated sugar over the cut sides of the blood oranges. Using a kitchen torch, carefully caramelize the sugar until it is golden and bubbly. If you don't have a torch, you can place them under a broiler for a few minutes.

Blood Orange Coulis

    Make the coulis

    In a small saucepan, combine the blood orange juice and granulated sugar. Heat over medium heat, stirring occasionally, until the sugar is dissolved. Simmer for about 5-7 minutes until slightly thickened. Remove from heat and let cool.

Creamsicle Whip

    Whip the cream

    In a mixing bowl, combine the heavy whipping cream, orange zest, powdered sugar, and vanilla extract. Use an electric mixer to whip until soft peaks form.
