    Prepare the Eggplant

    Preheat your oven to 400°F (200°C). Slice the eggplants into 1/2-inch thick rounds. Brush both sides with olive oil and season with salt and pepper. Place them on a baking sheet lined with parchment paper.

    Roast the Eggplant

    Roast the eggplant in the preheated oven for about 25-30 minutes, turning halfway through, until they're golden brown and tender.

    Prepare the Onions

    While the eggplant is roasting, thinly slice the fresh onion. In a pan over medium heat, add a tablespoon of olive oil and sauté the onions until they are soft and slightly caramelized, about 8-10 minutes.

    Prepare the Avocado

    Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it lightly with a fork and season with salt and pepper to taste.

    Assemble the Phoagie

    Once the eggplant is roasted, remove it from the oven. Take the seeded hoagie rolls and spread a generous layer of hoisin sauce on the inside. Layer the roasted eggplant, mashed avocado, sautéed onions, and fresh cilantro inside each hoagie.

    Add Pho Sauce

    Drizzle pho sauce over the fillings in the hoagie rolls. Adjust the amount of sauce to your preference.

    Serve

    Close the hoagie rolls, slice them in half if desired, and serve immediately while warm.
