    Prepare the Sauerkraut

    If using canned sauerkraut, drain and rinse it under cold water to reduce the saltiness. If using fresh, simply rinse and chop into smaller pieces if necessary.

    Prepare the Pastrami

    If the pastrami is not pre-sliced, slice it into thin, even pieces. If desired, you can lightly heat the pastrami in a pan or microwave for a few seconds to warm it up.

    Assemble the Sandwich

    Take two slices of rye bread and spread 2 tablespoons of Russian dressing on one side of each slice. Layer 4 oz of pastrami, followed by 1/2 cup of sauerkraut, and then 2 slices of Swiss cheese on one of the slices. Top with the other slice of bread, dressing side down.

    Grill the Sandwich

    Heat a skillet or a panini press over medium heat. If desired, spread 1 tablespoon of butter on the outside of each sandwich. Place the sandwich in the skillet and cook for about 4-5 minutes on each side or until the bread is golden brown and the cheese is melted.

Serving

    Slice and Serve

    Once the sandwich is grilled to perfection, remove it from the heat and let it rest for a minute. Slice the sandwich in half and serve hot with additional Russian dressing on the side if desired.
