Prepare the Eggs
In a medium bowl, crack the 2 large eggs and add 1 tsp of salt and 1 tsp of black pepper. Whisk until well combined and slightly frothy.

Cook the Eggs
Heat a non-stick skillet over medium heat and add 1 tbs of butter. Once melted, pour in the whisked eggs. Stir gently with a spatula, allowing the eggs to cook evenly until they are fluffy and just set, about 3-4 minutes. Remove from heat.

Warm the Pastrami
In the same skillet, add the 4 oz of house-smoked pastrami and heat for about 1-2 minutes, just until warmed through. Remove from heat.

Assemble the Sandwich
On one slice of rye bread, layer the cooked eggs, followed by the warmed pastrami, and top with 2 slices of Cooper sharp American cheese. Place the second slice of rye bread on top.

Serve
Remove the sandwich from the skillet, slice in half, and serve immediately while hot.
