Latke Preparation

    Grate the Vegetables

    Grate the potatoes and onion using a box grater or food processor. Place them in a clean kitchen towel and squeeze out excess moisture.

    Mix Ingredients

    In a large mixing bowl, combine the grated potatoes and onion with eggs, flour, salt, and black pepper. Mix until well combined.

    Heat Oil

    In a large skillet, heat vegetable oil over medium-high heat. You want enough oil to cover the bottom of the skillet.

    Cook Latkes

    Scoop about 1/4 cup of the latke mixture into the skillet, flattening it slightly with a spatula. Cook for about 4-5 minutes on each side until golden brown and crispy. Remove from the skillet and drain on paper towels.

Topping Assembly

    Prepare the Toppings

    While the latkes are frying, prepare the toppings. Slice the unagi into bite-sized pieces and chop the scallions.

    Assemble the Latkes

    Once the latkes are cooked and drained, place them on a serving platter. Top each latke with a piece of unagi, drizzle with Kewpie mayonnaise, and garnish with pickled ginger and chopped scallions.
