Prepare the Potatoes
Peel and grate the russet potatoes using a box grater or food processor. Place the grated potatoes in a clean dish towel and squeeze out excess moisture. This will help ensure a crispy texture.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat. Make sure there is enough oil to cover the bottom of the skillet, about 1/4 inch deep.

Cook Until Golden Brown
Cook the patties for about 4-5 minutes on each side until they are golden brown and crispy. Adjust the heat as necessary to prevent burning.

Drain and Serve
Once cooked, remove the latka'd hash browns from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve warm with sour cream and applesauce on the side.
