Grilled Maitake with Crispy Egg

    Prepare the Maitake Mushrooms

    Clean the maitake mushrooms gently with a damp cloth to remove any dirt. Cut them into smaller pieces if they are large.

    Marinate the Mushrooms

    In a bowl, combine the olive oil, salt, and black pepper. Toss the maitake mushrooms in the mixture until they are evenly coated. Let them marinate for about 15 minutes.

    Grill the Mushrooms

    Preheat your grill or grill pan over medium-high heat. Grill the marinated maitake mushrooms for 6-8 minutes, turning occasionally, until they are tender and have nice grill marks. Remove from heat and set aside.

    Fry the Eggs

    In a skillet over medium heat, add a little olive oil (if needed) and crack the eggs into the pan. Cook the eggs until the whites are crispy and the yolks are still runny (about 3-4 minutes). Carefully remove the eggs and set them on a plate.

    In a small bowl, whisk together the soy sauce, sesame oil, mayonnaise, and rice vinegar until smooth. Adjust seasoning to taste.
