Grilled Cauliflower

Preparation and Grilling

    Prepare the Cauliflower

    Remove the leaves and stem from the cauliflower head. Cut the cauliflower into thick slices or steaks.

    Marinate the Cauliflower

    In a bowl, mix olive oil, salt, and black pepper. Brush the cauliflower slices with the olive oil mixture on both sides.

    Grill the Cauliflower

    Preheat the grill to medium-high heat. Place the cauliflower steaks on the grill and cook for about 5-7 minutes on each side, or until golden brown and tender.

    Make the Almond Puree

    In a blender, combine almonds, garlic, and water. Blend until smooth and creamy, adding more water if necessary to reach desired consistency. Season with salt to taste.

    Prepare the Pickled Onions

    Thinly slice the red onion and place it in a bowl. In a separate bowl, mix apple cider vinegar, sugar, and a pinch of salt. Pour the vinegar mixture over the onions and let sit for at least 15 minutes.

    Toast the Pine Nuts

    In a small skillet over medium heat, toast the pine nuts for about 3-5 minutes, stirring frequently until golden brown. Remove from heat and let cool.

    On a plate, place the grilled cauliflower steaks, drizzle with almond puree, sprinkle with toasted pine nuts, and top with pickled onions before serving.
