French Fries Preparation

    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into even-sized sticks, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

    Fry the Potatoes

    Carefully add the dried potato sticks to the hot oil in small batches. Fry for about 5-7 minutes or until golden brown. Remove and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle them with salt to taste.

    Prepare the Malt Vinegar Mayo

    In a small bowl, mix the mayonnaise with malt vinegar until well combined. Adjust the vinegar to taste.
