Method

Preparation Steps

  1. 1

    Prepare the Ingredients

Gather all your ingredients: rye bread, house corned beef, Cooper sharp American cheese, eggs, butter, salt, and black pepper.

  2. 2

    Cook the Corned Beef

In a skillet over medium heat, add the house corned beef. Cook for about 3-4 minutes until heated through and slightly crispy. Remove from the skillet and set aside.

  3. 3

    Whisk the Eggs

In a bowl, crack the eggs and whisk them together with the salt and black pepper until well combined.

  4. 4

    Cook the Eggs

In the same skillet, melt the butter over medium-low heat. Pour in the whisked eggs and stir gently with a spatula. Cook until the eggs are fluffy and just set, about 3-5 minutes.

  5. 5

    Assemble the Sandwich

On one slice of rye bread, layer the cooked corned beef followed by the fluffy eggs. Place the slices of Cooper sharp American cheese on top, then cap it with the second slice of rye bread.

  6. 6

    Grill the Sandwich

In the skillet, grill the sandwich over medium heat for 2-3 minutes on each side, or until the bread is golden brown and the cheese is melted.

  7. 7

    Serve

Remove the sandwich from the skillet, slice in half, and serve immediately while warm and cheesy.
