Prepare the Tofu
Begin by draining the extra firm tofu, then wrap it in a clean kitchen towel to remove excess moisture. Place a weight on top for about 15 minutes.

Make Whipped Tofu
Once the tofu is drained, break it into small pieces and place it in a food processor. Add a pinch of salt and blend until smooth and creamy. Adjust seasoning with more salt if needed.

Char the Peppers
Heat a grill pan over medium-high heat. Once hot, add the prepared shishito peppers and grill for about 4-6 minutes, turning occasionally until they are blistered and charred.

Plate the Dish
On a serving plate, spread the whipped tofu as a base. Arrange the charred shishito peppers on top. Drizzle with Aleppo pepper oil.

Finish with Garnish
Sprinkle cooked buckwheat over the dish and add fresh mint leaves as a garnish. Serve immediately.
