Oysters
Method
Preparation
- 1
Prepare the Oysters
Preheat your broiler on high. Rinse the fresh oysters under cold water to remove any grit. Shuck the oysters carefully, keeping the oyster meat in the half shell. Place the shucked oysters on a baking sheet.
- 2
Make the Scampi Butter
In a medium saucepan, melt the unsalted butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned. Stir in the chopped fresh basil, red pepper flakes, salt, and black pepper. Remove from heat and set aside.
- 3
Broil the Oysters
Spoon a generous amount of the scampi butter over each oyster. Cut the lemon in half and squeeze the juice over the oysters, then place the lemon halves on the baking sheet. Broil the oysters for about 3-5 minutes, or until the edges are bubbly and golden brown.
- 4
Serve
Remove the oysters from the oven and let them cool slightly. Serve immediately, garnished with additional fresh basil and the charred lemon halves for squeezing over the oysters.
