Blueberry Chutney

Method

Blueberry Chutney

  1. 1

    Prepare the Chutney

In a small saucepan, combine fresh blueberries, sugar, lemon juice, and cinnamon. Cook over medium heat, stirring occasionally, until the blueberries burst and the mixture thickens slightly, about 10 minutes. Remove from heat and let it cool.

Golden Milk

  1. 2

    Make Golden Milk

In a small saucepan, combine coconut milk, turmeric powder, ginger powder, and honey or maple syrup. Heat over medium heat, stirring until all ingredients are well mixed and warmed through, about 5 minutes. Do not boil. Set aside.

Chai-Spiced Granola

  1. 3

    Prepare the Granola

Preheat your oven to 350°F (175°C). In a large bowl, mix rolled oats, chopped nuts, chia seeds, cinnamon, cardamom, maple syrup, and melted coconut oil. Spread the mixture on a baking sheet lined with parchment paper. Bake for 20-25 minutes, stirring halfway through, until golden and fragrant. Let it cool completely.

Assemble the Bowl

  1. 4

    Combine and Serve

In a serving bowl, layer the blueberry chutney at the bottom, followed by a generous scoop of yogurt. Pour the golden milk over the yogurt. Top with a handful of chai-spiced granola, dark chocolate shavings, and extra fresh blueberries. Serve immediately and enjoy!
