Roast the Tomatoes
Preheat your oven to 400°F (200°C). Spread the cherry tomatoes on a baking sheet, drizzle with 1 tablespoon of olive oil, and sprinkle with salt and black pepper. Roast in the oven for about 15-20 minutes until they are blistered and caramelized.

Cook the Pasta
While the tomatoes are roasting, bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain the pasta, reserving about 1/2 cup of the pasta water.

Combine Ingredients
In a large bowl, combine the cooked penne pasta, roasted tomatoes, and the remaining tablespoon of olive oil. Toss gently, adding reserved pasta water as needed to create a light sauce.

Add Basil and Parmesan
Tear the fresh basil leaves and add them to the pasta mixture, along with the grated parmesan cheese. Toss everything together until well combined.

Serve
Taste and adjust seasoning with more salt or pepper if desired. Serve warm, garnished with additional basil and parmesan if you like.
