Melt the Chocolate
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt over a double boiler or in the microwave, stirring until smooth. Allow to cool slightly.

Whip the Egg Yolks
In a separate bowl, whisk the egg yolks with granulated sugar until the mixture is pale and slightly thickened.

Combine Mixtures
Gradually add the melted chocolate mixture to the egg yolk mixture, stirring constantly until well combined.

Whip the Cream
In another bowl, whip the heavy cream and vanilla extract until soft peaks form. Gently fold the whipped cream into the mousse mixture.

Chill
Spoon the mousse into individual serving dishes and refrigerate for at least 2 hours, or until set.

Serve chilled, optionally topped with additional whipped cream and chocolate shavings.
