Prepare the Grits
In a medium saucepan, bring 4 cups of water to a boil. Stir in the grits and Old Bay seasoning. Reduce the heat to low and cook, stirring occasionally, for about 20-25 minutes until creamy. Remove from heat and stir in 1 tablespoon of butter. Set aside.

Cook the Shrimp
In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat. Add the diced onion, bell pepper, and celery (the Cajun Trinity) and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

Finish with the Shrimp
Add the shrimp to the skillet, seasoning with salt and black pepper. Cook until the shrimp are pink and cooked through, about 3-5 minutes.

Serve
To serve, spoon the creamy grits onto plates and top with the shrimp and vegetable mixture. Garnish with chopped scallions.
