Prepare the Saffron Aioli
In a small saucepan, combine the saffron threads with 1 tablespoon of hot water. Let it steep for about 5 minutes. In a bowl, mix the mayonnaise, minced garlic, lemon juice, and the saffron mixture. Stir well and set aside.

Sear the Scallops
Heat olive oil in a large skillet over medium-high heat. Pat the scallops dry with paper towels and season with salt and black pepper. Once the oil is hot, add the scallops to the skillet, ensuring they are not touching each other. Sear for about 2-3 minutes on each side until they are golden brown and opaque in the center.

Plate the Dish
On a serving plate, spread a generous amount of romesco sauce. Place the seared scallops on top, drizzle with saffron aioli, and garnish with sliced drop peppers and chopped toasted almonds.
