    Prepare the Potatoes and Parsnips

    Preheat the oven to 400°F (200°C). Toss the fingerling potatoes and parsnips with 2 tablespoons of olive oil, salt, and pepper. Spread them in a single layer on a baking sheet and roast for 25-30 minutes, or until tender and golden brown.

    Cook the Salmon

    While the vegetables are roasting, heat 1 tablespoon of olive oil in a skillet over medium-high heat. Season the salmon fillets with salt and pepper. Once the oil is hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes, then carefully flip and cook for another 3-4 minutes, or until cooked through.

    Prepare the Greens

    In a bowl, combine the arugula and frisée. Drizzle with olive oil and lemon juice, and toss to combine.

    Plate the Dish

    On a serving plate, arrange the roasted potatoes and parsnips. Place the salmon fillet on top, add a generous spoonful of romesco sauce over the salmon, and serve with the dressed greens on the side.
