Lobster Bisque Directions

    Prepare the Stock

    In a large pot, heat the olive oil over medium heat. Add lobster shells and sauté until fragrant, about 5-7 minutes.

    Add Vegetables

    Stir in the chopped onion, carrot, celery, and garlic. Cook until softened, about 5 minutes.

    Incorporate Tomato Paste

    Add the tomato paste and cook for another 2 minutes.

    Deglaze with Wine

    Pour in the white wine and scrape up any bits from the bottom of the pot. Let it simmer for 5 minutes.

    Add Fish Stock

    Add the fish stock to the pot and bring to a boil. Reduce heat and let it simmer for 30 minutes.

    Strain the Stock

    Strain the stock through a fine mesh sieve into a clean pot, pressing down on the shells to extract as much flavor as possible.

    Make the Bisque

    Return the strained stock to the heat and stir in the heavy cream. Bring to a gentle simmer.

    Add Crab Meat

    Fold in the lump crab meat, chives, and season with salt and black pepper to taste. Cook for an additional 5 minutes.

    Serve

    Ladle the bisque into bowls and drizzle with tarragon oil before serving.
