Pickle the Apple
Slice the apple thinly and mix with apple cider vinegar and a pinch of salt. Let sit for at least 15 minutes.

Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and cut them in half. Toss them with olive oil, salt, and pepper.

Fry the Brussels Sprouts
Heat a large skillet over medium-high heat and add the Brussels sprouts. Fry until they are golden brown and crispy, about 8-10 minutes.

Make Maple Fish Caramel
In a small saucepan, combine maple syrup and fish sauce. Simmer on low heat until slightly thickened, about 5 minutes.

Place the fried Brussels sprouts on a serving plate, drizzle with the maple fish caramel, top with pickled apple slices, and sprinkle with grated white cheddar.
