Prepare the Cake
Preheat your oven to 180°C (350°F). Grease an 8-inch round cake pan and line the bottom with parchment paper.

Melt Chocolate and Butter
In a heatproof bowl, melt the dark chocolate and butter together over a double boiler or in the microwave. Stir until smooth and let it cool slightly.

Mix Ingredients
In a mixing bowl, whisk together the sugar and eggs until combined. Add the melted chocolate mixture, vanilla extract, and salt. Mix until smooth.

Bake the Cake
Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

Make Whipped Ganache
While the cake is baking, heat the heavy cream until just simmering. Pour it over the dark chocolate and let it sit for a few minutes. Stir until smooth, then chill in the refrigerator until thickened. Whip until fluffy.

Prepare Cherry Coulis
In a saucepan, combine the fresh cherries, sugar, and lemon juice. Cook over medium heat until the cherries break down. Blend until smooth and strain to remove skins.

Serve
Once the cake is cooled, remove from the pan and top with whipped ganache. Drizzle cherry coulis over the top and garnish with fresh cherries and chocolate shards.
