    Prepare the Pommes Purée

    Peel and chop the potatoes into even-sized pieces. Boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot.

    Mashing the Potatoes

    Add butter and heavy cream to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.

    Grill the Endive

    Cut the endive in half lengthwise and brush with olive oil. Season with salt and pepper. Grill on medium-high heat until charred and tender, about 3-5 minutes.

    Cook the Chicken

    Season the chicken breasts with salt, pepper, and thyme. Heat olive oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes per side or until fully cooked. Remove and let rest.

    Make the Chicken Jus

    In the same skillet, add the chicken stock and bring to a boil. Reduce heat and simmer until reduced by half. Strain if desired.

    Plate the Dish

    On each plate, add a scoop of pommes purée, top with grilled endive, and slice the chicken breast. Drizzle with chicken jus before serving.
