Cooking Instructions

  1. 1

    Prepare the Pasta

Bring a large pot of salted water to a boil. Add the rigatoncini pasta and cook according to package instructions until al dente. Drain and set aside.

  2. 2

    Make the Beef Ragu

In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until the onion is translucent.

  3. 3

    Add Ground Beef

Add the ground beef to the skillet. Cook until browned, breaking it into small pieces with a wooden spoon. Season with salt and black pepper.

  4. 4

    Deglaze with Red Wine

Pour in the red wine and scrape the bottom of the skillet to deglaze. Allow the wine to reduce for about 5 minutes.

  5. 5

    Add Balsamic Vinegar

Stir in the balsamic vinegar and let it simmer for an additional 5 minutes, allowing the flavors to meld.

  6. 6

    Combine with Pasta

Add the cooked rigatoncini to the skillet and toss to combine with the beef ragu. If necessary, adjust seasoning with more salt and pepper.

  7. 7

    Serve

Plate the beef rigatoncini and sprinkle generously with grated Asiago cheese and chopped fresh basil before serving.
