Yuca Fries

Prepare Yuca
Peel the yuca and cut it into thick strips, resembling fries. Rinse the yuca strips under cold water to remove excess starch.

Fry Yuca
Heat the vegetable oil in a deep fryer or a large pot to 350°F (175°C). Fry the yuca strips in batches until golden brown and crispy, about 5-7 minutes.

Season Fries
Remove the fries from the oil and drain on paper towels. While hot, sprinkle with house spice mix and salt to taste.

Pickle Onions
Pour the hot pickling liquid over the sliced onions, making sure they are submerged. Let cool to room temperature, then cover and refrigerate for at least 30 minutes before serving.
Sriracha Aioli

Prepare Aioli
In a small bowl, whisk together mayonnaise, sriracha sauce, minced garlic, and lime juice until smooth and well-combined.
