White Chocolate & Passion Fruit Mousse Recipe

Prepare Mousse

    Melt the Chocolate

    Chop the white chocolate into small pieces and place them in a heatproof bowl. Set the bowl over a pot of simmering water to create a double boiler. Stir occasionally until the chocolate is completely melted and smooth. Remove from heat and let it cool slightly.

    Prepare Gelatin

    In a small bowl, sprinkle the gelatin powder over 50 ml of cold water. Let it sit for about 5 minutes until it blooms. Then, gently heat the mixture (you can use the microwave for about 10 seconds) until the gelatin is completely dissolved. Allow it to cool slightly.

    Whip the Cream

    In a separate mixing bowl, whip the heavy cream with a hand mixer or stand mixer until soft peaks form. Gradually add the sugar while continuing to whip until stiff peaks form.

    Combine Ingredients

    Fold the melted white chocolate into the whipped cream gently until just combined. Then, add the passion fruit pulp and the dissolved gelatin, folding them in until evenly mixed.

    Chill the Mousse

    Divide the mousse mixture into serving cups or bowls. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.

Prepare Garnish

    Prepare Strawberries

    Rinse the fresh strawberries under cold water and pat them dry with a paper towel. Remove the green stems and slice them in half or leave them whole, depending on your preference.

    Garnish the Mousse

    Once the mousse is set, remove it from the refrigerator. Top each mousse cup with the prepared strawberries and a few mint leaves for garnish.
