Prepare the Marinade
In a large bowl, combine the ancho chili powder, chipotle chili powder, minced garlic, cumin, oregano, pineapple juice, white vinegar, salt, and black pepper.

Marinate the Pork
Add the thinly sliced pork shoulder to the marinade and coat well. Cover and refrigerate for at least 2 hours, preferably overnight for better flavor.
Cooking the Pork

Cook the Pork
Heat olive oil in a large skillet over medium-high heat. Remove the pork from the marinade and cook in batches until browned and cooked through, about 4-5 minutes per side.

Once cooked, remove the pork from the skillet and let it rest for 5 minutes before slicing it into bite-sized pieces.
