Marinade Preparation

    Prepare the Marinade

    In a large bowl, combine the ancho chili powder, chipotle chili powder, minced garlic, cumin, oregano, pineapple juice, white vinegar, salt, and black pepper.

    Marinate the Pork

    Add the thinly sliced pork shoulder to the marinade and coat well. Cover and refrigerate for at least 2 hours, preferably overnight for better flavor.

Cooking the Pork

    Cook the Pork

    Heat olive oil in a large skillet over medium-high heat. Remove the pork from the marinade and cook in batches until browned and cooked through, about 4-5 minutes per side.

    Rest and Slice

    Once cooked, remove the pork from the skillet and let it rest for 5 minutes before slicing it into bite-sized pieces.

Taco Assembly

    Warm the Tortillas

    In a separate skillet, warm the corn tortillas over medium heat until they are soft and pliable, about 30 seconds on each side.

    Assemble the Tacos

    On each tortilla, add a portion of the cooked pork, followed by diced pineapple, chopped onion, and cilantro. Squeeze lime juice on top before serving.
